2 teaspoons Dijon mustard
2 tablespoons vinegar (apple cider balsamic, or white-wine vinegar)
1/2 cup cold-pressed walnut oil
1 tablespoon cold-pressed safflower oil
Pinch sea salt
Freshly ground black pepper to taste

Combine mustard, salt, pepper, and vinegar in a bowl and gradually whisk in oil.
